Crockpot Dinners with Chicken
This delicious recipe has a couple of unusual ingredients for a chili recipe. This boneless chicken recipe includes sweet potato and tapioca.

Ingredients
2 pounds chicken breast or coarsely ground turkey or chicken
1 cup onion, chopped
3 cloves garlic, minced
1/2 cup green pepper
3 tablespoons chili powder
1 (15-ounce) can kidney beans, drained and rinsed
1 (15-ounce) can white beans, drained and rinsed
2 (28-ounce) cans diced fire roasted tomatoes
1 medium sweet potato (about 10 ounces), peeled and shredded
1 - 2 cups chicken broth, depending on desired thickness of chili
1/4 cup instant tapioca (recommended: Minute tapioca)
1 to 2 chipotle chiles in adobo sauce with seeds, chopped
2 tablespoons soy sauce
1 tablespoon kosher salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
Pinch ground cloves
1/2 cup lager-style beer, optional
Directions
1. If using chicken breast, cut the chicken into small chunks. Brown the chicken breast or ground turkey or chickenin a pan lightly coated with oil. Put the chicken in the slow cooker.
2. Brown the onions, garlic and green pepper in the pan with a light coating of oil. Put into crock pot.
3. Add the remaining ingredients, except the beer.
4. Stir everything together, cover, and cook on LOW for 6 to 8 hours.
5. Just before serving, if using, stir in the beer.
