Crockpot Chili Recipes

Crockpot chili recipes are easy main dish recipes to help with your busy schedule. Chili makes perfect crockpot dinners. I love to freeze the leftovers for a future meal.

Crockpot Dinners with Chicken

This delicious recipe has a couple of unusual ingredients for a chili recipe. This boneless chicken recipe includes sweet potato and tapioca.

Your family will love this slow cooker chili. You will definitely want to add this easy main dish recipe to your favorite crockpot dinners file.


Ingredients

2 pounds chicken breast or coarsely ground turkey or chicken

1 cup onion, chopped

3 cloves garlic, minced

1/2 cup green pepper

3 tablespoons chili powder

1 (15-ounce) can kidney beans, drained and rinsed

1 (15-ounce) can white beans, drained and rinsed

2 (28-ounce) cans diced fire roasted tomatoes

1 medium sweet potato (about 10 ounces), peeled and shredded

1 - 2 cups chicken broth, depending on desired thickness of chili

1/4 cup instant tapioca (recommended: Minute tapioca)

1 to 2 chipotle chiles in adobo sauce with seeds, chopped

2 tablespoons soy sauce

1 tablespoon kosher salt

1 teaspoon dried oregano

1 teaspoon ground cumin

1/4 teaspoon ground cinnamon

Pinch ground cloves

1/2 cup lager-style beer, optional

Directions

1. If using chicken breast, cut the chicken into small chunks. Brown the chicken breast or ground turkey or chickenin a pan lightly coated with oil. Put the chicken in the slow cooker.

2. Brown the onions, garlic and green pepper in the pan with a light coating of oil. Put into crock pot.

3. Add the remaining ingredients, except the beer.

4. Stir everything together, cover, and cook on LOW for 6 to 8 hours.

5. Just before serving, if using, stir in the beer.

Have It Your Way, Every way

1. Top your easy main dish recipes for chili with sour cream, shredded Cheddar or Jack cheese, chopped scallions, and chopped pickled jalapenos

2. Stir in 1 tsp chili powder 5 minutes before serving.

3. Add couscous instead of tapioca

4. Add frozen corn.
