Chili Chicken Tortilla Soup
This crock pot chicken recipe is an easy no-fuss chicken tortilla soup. All you do is put everything in the crock pot and turn it on.
Ingredients 1 lb whole chicken breast, frozen 1 can diced tomatoes (14.5 ounce) 1 can black beans, rinsed and drained (15 ounce) 1 can enchilada sauce (10 ounce) 1 can chopped green chili peppers (4 ounce) 1 bag frozen corn (10 ounce) 4 cups chicken broth 1 cup onion, chopped 3 cloves garlic, minced 1 T cilantro, chopped 1 tsp chili powder 1 tsp cumin 1 tsp salt 1/2 tsp oregano 1/4 tsp black pepper 1/4 tsp red pepper flakes 1 bay leaf Directions Place all ingredients in the crock pot and stir. Cover and cook for 6 - 8 hours on low or on high for 3 - 4 hours. About 1 hour before remove chicken breast and shred. Return to crock pot and cook for the remaining hour.
