Chicken Chili Soup - Quick Easy Chicken Recipes

Ingredients2 lbs chicken breast, cut in small cubes 1 cup green bell pepper, diced 1 cup red bell pepper, diced 1 cup onion, chopped 4 cloves garlic, minced 1 cup frozen corn 3 can kidney beans, rinsed and drained (15 ounce) 2 can diced tomatoes (14.5 ounce) 2 cups chicken broth 1 can tomato sauce (15 ounce) 1 T fresh parsley, chopped 2 tsp chili powder 1/2 tsp cumin 1/2 tsp cayenne 1/4 tsp salt Directions 1. Salt the chicken breast. Place dutch oven coat on stove over medium heat. Coat the bottom with olive oil. Saute chicken. Remove chicken to a bowl 2. Add the green and red pepper and onion and saute for a few minutes. Add the garlic and saute to all vegetables are tender. 3. Return the chicken to the dutch oven. Add the chili powder, cumin and cayenne. Saute for 2 minutes. 4. Add the remaining ingredients. Bring to a boil. Reduce heat, cover and cook for 30 minutes. 5. Remove cover and continue to simmer for an additional 15 minutes.
