Ingredients 2 cups shredded zucchini 1 egg, beaten 1/4 cup finely chopped onion 2 cloves garlic through garlic press 4 T flour 1/4 cup Italian bread crumbs 1/2 cup grated parmesan cheese 1/2 tsp red pepper flakes 1/4 tsp salt 1/4 tsp pepper 1/8 tsp chili powder Vegetable oil 1/2 tsp Kosher salt Directions 1. Grate 2 cups of zucchini. Put into a colander, pour 1/2 tsp of the kosher salt over top. Let the zucchini drain for ~ 30 minutes. Then, put the zucchini in a paper towel and pat try. 2. While the zucchini is draining, saute the finely chopped onion and garlic. 3. In a medium bowl, combine the zucchini, egg, onion, flour, bread crumbs, Parmesan cheese, salt, pepper and chili powder. Use hands and mix ingredients together. 4. Heat a small amount of oil in a skillet over medium-high heat. Make small patties and drop zucchini mixture into pan. Cook for a few minutes on each side until golden. Serve with sour cream
