Ground Turkey Recipe

with Pumpkin

This ground turkey recipe with pumpkin is absolutely amazing. The pumpkin adds a nuttiness to turkey chili recipes and it provides a great source of vitamin A.

Ingredients

2 T Olive oil

1 cup onion, chopped

3 cloves garlic, minced

1 cup green bell pepper, chopped

1 jalapeno, seeded and chopped

1 lb ground turkey

1 can diced tomatoes, with liquid (14.5 ounce)

1 can pumpkin puree (15 ounce)

1 can Kidney beans, drained and rinsed (15 ounce)

1 cup chicken broth

1 T chili powder

1 tsp cumin

1 tsp salt

1/8 tsp cayenne

Directions

In large dutch oven heat oil over medium heat. Add onions, green pepper and jalapeno and cook for 5 minutes.

Add garlic and cook for an additional 3 minutes. Push vegetables to the side. Add ground turkey and salt to thepot and cook until done.

Add the chili powder, cumin and cayenne to the pot and stir together all ingredients. Cook for 2 minutes.

Add the tomatoes with the liquid, kidney beans, pumpkin and chicken broth. Bring to a boil. Reduce heat to a simmer.

Cover and cook for 30 - 45 minutes, stirring occasionally.

Have it Your Way, Every Way

1. Make it a turkey and black bean recipe instead of using kidney beans.

2. Serve it over brown rice

3.To make it even better for your low calorie low fat diet use ground turkey breast meat and eliminate the olive oil. Spray the pa with Pam to cook the vegetables.
