Tofu and Pumpkin Chili
One of the best healthy vegetarian recipes is this delicious , heart warming chili. The sweet nuttiness of this chili makes it a clear favorite. Ingredients 2 T Olive oil 1 cup onion, chopped 3 cloves garlic, minced 1 cup green bell pepper, chopped 1 jalapeno, seeded and chopped 1 lb frozen, extra firm tofu, thawed 1 can diced tomatoes, with liquid (14.5 ounce) 1 can pumpkin puree (15 ounce) 1 can Kidney beans, drained and rinsed (15 ounce) 1 cup vegetable broth 1 T chili powder 1 tsp cumin 1 tsp salt 1/8 tsp cayenne Directions Thaw the tofu. After it is thawed, press out as much water as you can. Crumble the tofu and set aside. In large dutch oven heat oil over medium heat. Add onions, green pepper and jalapeno and cook for 5 minutes. Add garlic and cook for an additional 3 minutes. Add the chili powder, cumin, salt and cayenne to the pot and stir together all ingredients. Cook for 2 minutes. Add the tomatoes with the liquid, kidney beans, pumpkin, tofu and vegetable broth. Bring to a boil. Reduce heat to a simmer. Cover and cook for 30 - 45 minutes, stirring occasionally.
