Beef, Pork and Black Bean Chili Recipe
This dish is a great chili recipe with lots of complex flavors combined together. Your kitchen will smell wonderful with the aroma of the cooking meat, onions, garlic and bell pepper. Anyone entering your home will think you are creating winning chili recipes in your kitchen.
Ingredients1 pound ground pork 1 pound ground beef 1 pound chuck steak, fat trimmed, cut into 1-inch cubes 2 tablespoons olive oil 3 cups diced onions 3 cups diced red bell peppers 6 garlic cloves, minced 2 tablespoons ground cumin 2 tablespoons chili powder 2 teaspoons dried oregano 2 teaspoons salt 1 teaspoon cayenne pepper 1 teaspoon coriander 1/2 teaspoon cinnamon 3 6-ounce cans tomato paste 3 cans diced tomatoes, drained 3 cans black beans, drained, rinsed (15-ounce cans) 2 tablespoons chopped fresh cilantro 1 cups water 1 cup red wine or beer 2 3/4 cups (about) beef broth Grated cheddar cheese Directions Heat olive oil in heavy large pot over medium-high heat. Salt the ground beef, ground pork and cubed meat. Add ground pork and ground beef and saute until brown, about 3 minutes. Add cubed beef and garlic and saute 5 minutes. Add coriander, chili powder, cumin, oregano, cinnamon, salt, and cayenne pepper cook for 2 minutes. Add 1 cup water and 1 cup beer or red wine; bring to boil. reduce heat, cover and simmer for 15 minutes . Add tomato paste and simmer 5 minutes. Add tomatoes, onions, and peppers. Cover and simmer 45 minutes. Add black beans and cilantro to chili. Add beef broth 3/4 cup at a time, until thinned to desired consistency. Bring chili to simmer and cook for 20 minutes and serve. This chili is even better the next day. Ladle hot chili into bowls; top with grated cheddar cheese and serve.
