White Chili Crock Pot Meals

Ingredients 2 cans white beans, drained and rinsed 1 bag frozen white corn (16 ounce) 1 cup chopped onion 4 cloves garlic, minced 1 cup cubed zucchini 1 can chopped green chilies (4 ounce) 1 cup vegetable broth 2 T lemon juice 1-1/2 tsp cumin 1 tsp Italian seasoning 1/4 tsp salt 1/8 tsp cayenne 1 - 2 T rice flour (optional) Directions 1. Chop onion, mince garlic and cube zucchini and put into crock pot. 2. Add drained and rinsed white beans, canned green chilies and frozen corn. 3. Add cumin, Italian seasoning, salt and cayenne to the crockpot. 4. Stir all ingredients together. 5. Add vegetable broth and lemon juice and stir. 6. Cook on low for 7 - 8 hours or on high for 5 - 6 hours. You can even cook on low for 6 hours and high for 1 hour. 7. If you think the chili is too thin add some rice flour to thicken or just serve it as is over rice.
