Sweet Cornbread Recipe

A Delicious Recipe for Cornbread

You will get a lot of rave reviews when you make this recipe for cornbread. Everyone will tell you it reminds them of the sweet cornbread at their favorite Mexican restaurant. It is perfect when served with a crock pot chili recipe or any of our chili recipes.

INGREDIENTS

1/2 cup butter, softened

1/3 cup all purpose flour

1 can creamed corn, 8.5 ounces

1 1/2 cups frozen whole-kernel corn

1/4 cup cornmeal

1/3 cup white sugar

2 tablespoons heavy whipping cream

1/4 teaspoon salt

1/2 teaspoon baking powder

DIRECTIONS

1. In a medium bowl beat butter until it is creamy. Add the flour, creamed corn and frozen corn and beat until well mixed.

2. Add in cornmeal, sugar, cream, salt, and baking powder and stir to combine. Pour batter into an ungreased 8x8 inch baking pan. Smooth batter and cover with aluminum foil. Place pan into a 9x13 inch baking dish that is filled a third of the way with water.

3. Bake in a preheated 350 degree oven F oven for 50 to 60 minutes. Remove the foil for the last 10 minutes of baking. Allow to cool for 10 minutes. Use a ice cream scoop or big spoon for easy removal from pan.

1. To reduce the fat, omit the cream and use 1/4 cup butter instead of 1/2 cup butter.

2. You can put the frozen corn in the food processor but leave chunky.

3. use Splenda instead of sugar
