A Very Filling Weight Watchers Chili

Turkey Breast Recipes
Ingredients
1 cooking spray
1 tsp canola oil
1 cup onion, chopped
2 garlic cloves, minced
1 cup red bell pepper(s), chopped
2 medium carrots, diced or sliced round
1 zucchini diced in thick pieces
1 pound lean ground turkey breast
2 Tbsp chili powder
1 Tbsp paprika
1 1/2 tsp red pepper flakes
1 tsp ground cumin
1 can chopped tomatoes, (14.5 ounce)
1 can black beans, rinsed and drained (15 ounce)
1 cup canned tomato sauce
1 cup chicken broth
1 1/2 Tbsp apple cider vinegar
1/2 tsp table salt
1/4 tsp black pepper
Directions
Spray dutch oven with cooking spray. Toss oil with chopped onion. Add onion to dutch oven and sauté over medium heat until onion is soft,about 5 to 7 minutes.
Add garlic and carrots; cook until garlic is softened, about 1 minute.
Add salt and pepper to turkey and brown meat in the dutch oven for about 5 minutes.
Add chili powder, paprika, red pepper flakes, cumin to meat mixture. Cook for 1 - 2 minutes.
Add tomatoes, tomato sauce, broth, vinegar, beans and red bell pepper and zucchini and stir.
Bring mixture to a boil. Cover, reduce heat and simmer until meat and vegetables are tender, about 30 to 45 minutes.
