White Bean Chicken Chili

White bean chicken chili is one of those healthy low calorie recipes. It is low in fat, full of flavor and should be part of your healthy heart menu. Combining a white bean chili recipe with dried bean recipes makes for a fantastic dish.



I first made this white bean chili recipe for a neighborhood gathering. It was a huge success. I made a
recipe for cornbread to serve it with. By the end of the evening there was not one crumb of this recipe for cornbread or one drop of this tasty white bean chili recipe left.

Ingredients

2 cups dried navy beans

5 cups chicken broth

1 cup water

2 cups shredded cooked chicken

2 cups chopped onion

3 cloves garlic, minced

1 can chopped green chilies

1 tsp cumin

1 tsp dried oregano

1/4 tsp cayenne

1/8 tsp cinnamon

Directions

1. Cover beans with water and soak overnight. Drain and rinse the next day.

2. In dutch oven, add beans, chicken broth, water, onion and garlic. Bring to a boil, then reduce heat to a simmer. Cover and cook for 3 hours stirring occasionally to prevent sticking.

3. Add cumin, oregano, cayenne, cinnamon and chicken to mixture. Cover and cook for an additional 45 minutes.

4. Let stand for 15 minutes then serve.

Have It Your Way, Every Way

1. Garnish with monterey jack cheese or other cheeses.

2. Garnish with fresh avocado chunks.

3. Add 1 chopped jalapeno to the recipe for a spicier chili.

4. Optional cooking method: Cook a crockpot white chicken chili and cook the beans for 6 - 8 hours on low. Turn the crockpot on high and add the chicken and other seasonings. Cook 1 additional hour.

5. You can also use low salt chicken broth.
