Sometimes the best way to get children eating healthy is to hide the healthy food. It actually works well for adults also.

Healthy Vegetable Recipes

Chili is a great place to hide healthy vegetables like, spinach, broccoli, peas, cauliflower, carrots, zucchini, sweet potatoes, etc. One of the best ways hide these vegetables in chili is by making a puree using one of these healthy vegetable recipes.

Potential Ingredients - any combination

2 cups cauliflower florets

2 cups broccoli florets

2 cup frozen peas

2 cups carrots

2 cups baby spinach leaves

You can also try sweet potatoes, butternut squash, green beans, etc.


Pick any 2, 3 or 4 vegetables you would like to include in the chili. Steam the vegetables or microwave them until done.

Put in food processor with 3 Tablespoons water or use a hand blender or Magic Bullet and puree.

Add 1/2 cup to 1 cup of the pureed mixture to the homemade chili recipe. Stir and cook the chili for an additional 10 minutes after adding the pureed vegetable mixture.

You can also do this with beans if your children will not eat them.

Freeze any leftover pureed mixture in 1/2 cup portions to add to future chilies or soups.
