Chicken Mole Recipe

This chicken mole recipe has a nice spicy flavor and is a perfect recipe for chicken mole. I like to serve it with an easy fruit salad recipe.




Ingredients

1 lb boneless, skinless chicken breast, cubed

4 tsp cooking oil

1/2 tsp salt

1/4 tsp pepper

1 cup chopped onion

1 cup chopped green bell pepper

2 cloves garlic, crushed or minced

1 can diced tomatoes (14.5 ounces)

3 T chicken broth

2 T chili powder

2 T unsweetened cocoa powder

2 T peanut butter

1/2 tsp ground cloves

1/2 tsp ground cinnamon

Directions

To make this recipe for chicken mole, season the cubed chicken breast with the salt and pepper.

Heat over medium heat 2 tsp of oil in a non stick skillet. Saute the chicken on both sides until no longer pink on the outside. Remove chicken to a bowl.

Add the additional 2 tsp of oil to the skillet. Add the onions, green bell pepper and garlic and cook until tender.

Stir in the chili powder, ground cloves and ground cinnamon. Mix together and cook for 1 minute.

Add the chicken to the skillet and mix all together until the chicken is coated with the seasoning.

Add the tomatoes with juice, chicken broth, cocoa powder and peanut butter. Stir until blended.

Bring to a boil, turn down to low, cover and cook for 30 minutes.

Serve this delicious Mexican chicken mole over rice or pasta. My friends and family love to eat this recipe for chicken mole with an easy fruit salad recipe.
