This recipe for Mexican cheese dip is one of the best dips using cream cheese. It is one of those easy dip recipes that is perfect for any party menu ideas.

I have handed out more copies of this Mexican cheese dip than any other recipe. I never have leftovers and neither will you.

Unbelievably Tasty Mexican Cheese Dip

Ingredients

2 T butter

1 can chopped tomatoes, drained (14.5 ounce)

1 block cream cheese (8 ounce)

1/2 cup half and half

1/2 cup chopped onion

1 small can chopped green chilies, drained

1 - 2 tsp diced jalapenos, depending on desired spiciness

1/4 tsp salt

Directions

1. Melt butter in skillet. Add onion and saute for 3 -5 minutes are until tender.

2. Add drained, chopped tomatoes, drained green chilies and jalapenos and salt. Let cook on low for 5 minutes.

3. Cut the cream cheese into cubes. Add to the vegetable mixture. Stir over low heat until cream cheese melts.

4. Add half and half and cook for 10 minutes or until mixture thickens.

Serve this hot cheese dip with tortillas. Out of all the party dip recipes you serve, everyone will rave about this Mexican Cheese Dip.

How To soften cream cheese?

Since this hot cheese dip is cooked over a stove there is no need to soften the cream cheese prior to making this Mexican cheese dip.

If you have a recipe where you need to use it immediately just put the unwrapped cream cheese in the microwave for 15 seconds at a time. I put it on a plate then it is easy to scrape off. You can also just leave it out unwrapped 60 minutes prior to using.

Can you freeze cream cheese?

Here is what the Kraft Foods website says: We do not recommend freezing cheese that will be used for spreading due to a possible change in its texture; it may become curdled in appearance and have a crumbly texture. Regular brick cream cheese can be frozen up to 2 months for use as an ingredient in recipes.

As a general guideline, most recipes containing both 1/3 Less Fat and regular cream cheese can be frozen up to six weeks.

Personally I do not like to make and freeze this recipe ahead of time. It can be made a day or two ahead and then just leave in the refrigerator.
