What makes this the best vegetarian chili? I throw all the ingredients in my slow cooker, set it, and forgot about this vegetarian chili recipe!

Relax, run errands, go to work and a few hours later - dinner is served! It is such comfort food, and it is very healthy easy recipes. You will definitely be looking forward to having leftovers tomorrow! Crock pot recipies are easy and tasty.

Ingredients

1 (28-ounce) can diced tomatoes

3-1/2 cups vegetable broth

1 (15-ounce) can red kidney beans, rinsed and drained

1 (15-ounce) can black beans, rinsed and drained

1 (15-ounce) can white (cannelloni) beans, rinsed and drained

1 cup frozen baby lima beans or regular lima beans

1 cup frozen corn

1 cup chopped onion

1 green bell pepper, seeded and chopped

3 cloves garlic, minced

1 tablespoon minced jalapeno

2 tablespoons chili powder

1 tablespoons dried Mexican oregano

2 teaspoons ground cumin

1 teaspoon ground coriander

1 to 2 teaspoons hot sauce

1/3 cup couscous

Directions

In a slow cooker, combine all ingredients but the couscous. Cover and cook on LOW for 6 to 8 hours or on high for 3 - 4 hours.

To thicken the chili approximately 20 minutes before serving remove 1 cup of beans and puree. Return the pureed beans to the crock pot and add couscous, cover and cook, until couscous is tender.

1. Garnish this vegetarian chili recipe with cilantro and/or cheese.

2. Serve it over rice

3. Substitute quinoa for the couscous

4. Add red bell pepper and yellow bell pepper

5. Add diced sweet potatoes
