Ingredients
1-1/2 lbs Beef Stew meat, cut into 1/2 cubes
2 cans Diced Tomatoes (14.5 ounces)
1 can Chopped Tomatoes with green chilies (10 ounces) I use Rotel
2 cans Black Beans, drained and rinsed (you can also use kidney beans)
1 cup Beef Broth
1/2 cup water
1-1/2 T Chili Powder
1 tsp Ground Cumin
1 tsp Oregano
1/2 tsp Salt
1/4 tsp Pepper
1/4 tsp Red Pepper Flakes
2 cups Chopped Yellow Onion
1 cup Chopped Green Bell Pepper
1/2 cup Chopped Red Bell Pepper
4 tsp Minced Garlic (or 4 cloves)
Directions
1. Turn the crockpot on low and add the 3 cans of tomatoes, beef broth, water, chili powder, cumin, oregano, and red pepper flakes. Stir together.
2. Stir in the onion, green bell pepper, red bell pepper and garlic.
3. Salt and pepper the meat cubes. Add to crockpot and stir to blend everything.
4. Cover and cook on low for 8 - 9hours or on high for 4 -5 hours. Stir in beans in the last 30 minutes.
Serve with shredded cheddar cheese and sour cream
