Healthy, Spicy 3 Bean Soup Recipes with Vegetables

I first had this hearty vegetarian soup when my friend, Dorothy served it to me as one of her healthy dinner recipes. I loved it! It was so tasty.

There is nothing better than putting together your own homemade vegetable soup recipes. This soup is chocked full of vegetables and beans and is hearty enough for any meal. Serve any of your vegetarian soup recipes with a salad or a hunk of bread or a delicious cornbread recipe

Ingredients

2 T Olive Oil

1-1/2 cups onion, chopped

1 celery stalks, chopped

1 carrots, cut in 1/2 inch pieces

1 red bell pepper, diced

4 cloves garlic, minced

1/4 cup chili powder

1/2 T ground cumin

1/2 T ground coriander

1 Tsp dried oregano

1 tsp salt

1/2 tsp dried red pepper flakes

1 can diced tomatoes with juice (14.5 ounce)

1 6 ounce can of tomato juice

5 T tomato paste

1 yellow squash cut in 1/2 inch half rounds

1 zucchini cut in 1/2 inch half rounds

1/2 cup frozen corn

1 cup broccoli pieces

1/3 cup dried green lentils

1 can garbanzo beans, rinsed and drained

1 can cannellini beans, drained and rinsed

4 cups vegetable broth

Directions

Heat the oil over medium heat in a dutch oven. Add the onions, celery, red bell pepper and carrot. Saute for 8 minutes. Add the garlic and saute another 5 minutes.

Add the chili powder, cumin, coriander, crushed red pepper, salt and oregano. Saute for additional 2 minutes.

Add the broth, beans and lentils. Bring to a boil and then reduce to simmer. Cook uncovered for 30 minutes.

Add the squash, zucchini, broccoli and corn and cook uncovered for an additional 15 minutes.
