Red Bean Chili
Ingredients
1 T Olive Oil
1 cup onion, chopped
3 cloves garlic, minced
1/2 cup green onions, white & green part
1/2 cup green bell pepper, chopped
2 T parsley, chopped
1-1/2 T Chili Powder
1 tsp ground cumin
1/4 tsp plus 1/8 tsp dried thymes leaves
1/8 tsp dried basil leaves
1/4 tsp salt
1/4 tsp vinegar
1/8 tsp cayenne
2 can dark red kidney beans, drained and rinsed, 14.5 ounces
3 cups vegetable broth
Directions
1. Heat oil in dutch oven, over medium heat. Add onions and green pepper and saute until translucent. Add garlic, parsley and green onions and cook an additional 2 minutes, stirring occasionally.
2. Add chili powder, cumin, thyme, salt, cayenne and basil and stir for an additional minute.
3. Set aside 2/3 cup of the kidney beans. Puree these beans with 3 T water. I like to use a hand blender like shown below.
4. Add the pureed beans, whole beans, vinegar and broth to the dutch oven. Bring to a boil.
5. Cover, reduce heat and simmer for 40 minutes.
6. Uncover and cook for an additional 20 minutes to thicken slightly. Let stand for 10 minutes and serve.
Have It Your Way, Every Way
1. Serve this good chili recipe with shredded cheese. Try a smoked Gouda for a unique variation or a Mexican blend of cheese.
2. Top with finely chopped red onions, sour cream and/or crackers.
3. Add shredded cooked chicken for a non-vegetarian version
