Taco Soup Recipe

This taco soup recipe is a snap to prepare. It is one of the best easy soup recipes you will ever make. Ingredients

2 lbs Ground Meat

1 cup chopped yellow onion

1 can kidney beans, drained and rinsed (15 ounce)

1 can black beans, drained and rinsed (15 ounce)

2 cans diced tomatoes (14.5 ounce)

1 can Chopped tomatoes with green chilies (10 ounce) I use Rotel

2 cups frozen corn

1 package taco seasoning mix (1.25 ounce)

1 package ranch salad dressing mix (1 ounce)

1 tsp chili powder

1-1/2 cups water

1/2 tsp salt

1 beef bouillon cube

Directions

1. Sprinkle salt on ground meat. Brown onions and ground meat. Drain off any excess fat.

2. Add taco seasoning mix, ranch salad dressing mix and chili powder. Stir together for 1 - 2 minutes.

3. Add remaining ingredients. Bring to a boil and then reduce heat. Simmer uncovered for 20 minutes.

Have It Your Way, Every Way

1. Top with cheddar cheese, and/or sour cream, cilantro, chopped onions

2. Use all kidney beans, all black beans or great northern beans or chili beans

3. Cut back on the water and serve it as a dip

4. Top with crushed fritos or tortillas

5. Serve over cornbread or rice

6. Use the fiesta ranch dip mix

7. Use canned corn instead of frozen

8. Add other vegetables
