Vegetable Salad Recipes
Vegetable salad recipes are great chili side dishes for spicy chili recipes or any chili recipes. These dishes along with other green salad recipes are a wonderful addition to any family dinner, chili party buffet or party menu ideas. They are high in fiber, vitamins and minerals.
Southwest Vegetable Salad
This is one of the best and tastiest green salad recipes with its mix of romaine lettuce and vegetables such as red, green and yellow bell pepper, onion, cucumber, tomatoes and jicama. Jicama is high in fiber and vitamin C. It is a wonderfully flexible recipe. You can substitute whatever you have on hand.
6 cups Romaine Lettuce, Chopped
1/2 Red Bell Pepper, diced
1/2 Yellow Bell Pepper, diced
1 cup Thinly Sliced Red Onion
1/2 cup Jicama, Thinly Sliced
1/2 cup Cucumber, Thinly Sliced
1/2 cup Tomatoes, Diced
1/4 cup Toasted Pumpkin Seeds
2 T Chopped Cilantro, optional
Salt to taste
Toss all ingredients together in a large bowl. Serve with your favorite ranch dressing. For a true southwest flavor blend in some pureed chipotle to the ranch dressing.
